Australian Native Dishes for Spring
This is your chance to discover the foods of Australia and
surprise the family with something different for Spring.
Australian native foods are pure and wild with intense
flavors and vibrant colors.
Kangaroo proscuitto, desert tomato chutney, marinated
buffalo mozzarella in wild lime olive oil and wild mint.
Baked fish of the day wrapped in paper bark served with

The Taste of Spain
4 week course @ Home.
2 hours per week.

traveling time in the Freo metro area included.
The Spanish cuisine is not just about tapas or paella, it is a
regional cuisine like its other European counterparts.
The essential ingredient being olive oil.
Like other European cuisines Spain focuses on fresh, local
and seasonal produce cooked simply. There are many recipes
representing the regions of Spain but for this course we will
concentrate on recipes familiar to us using ingredients
sourced from Australia.

Flavors of Lucca
Tuscany
Lucca is an idyllic medieval city in Tuscany surrounded by
olive groves, farms and vineyards.
Its cuisine is a reflection of the city’s sophistication and
simplicity.
The four week course will explore the Lucchese cuisine
which is very unique to Tuscany.
The food is simple, elegant and highlights the quality of
produce not the quantity. The flavours are subtle with very
little need of garlic and strong dominating spices.
